This bizarre French customer habit is driving shop owners crazy
Despite what her customers might think, this cheesemonger no longer follows a long-advocated food hygiene rule—and she has her reasons.
In any food business, adhering to hygiene standards is crucial to ensure the quality and safety of the products. This is especially true in cheese shops, where delicate and perishable items like raw milk tommes and crottins are cut and packaged all day, making them more susceptible to bacterial contamination.
Over time, cheesemongers have developed stringent hygiene habits to prevent any issues. One particular practice has been in place for so long that even customers keep a close eye to ensure it’s being followed. However, what seems reassuring at first glance may not be as reliable as one would think.
“Yes, this might surprise some,” begins Émilie Cavero, a cheesemonger, on her Instagram account. Addressing those who criticize her for not wearing gloves, she openly states that gloves are “not necessarily recommended in food handling anymore.” Why? “Because when you wear gloves, you can’t really tell if they are clean or dirty,” she explains. “Often, we keep the gloves on for an undefined amount of time, whereas with bare hands, as soon as they get dirty, we’re more likely to go wash them. We do it much more frequently than we would change gloves!” She adds, addressing the skeptics, that this is what is now taught in mandatory hygiene training courses for food industry professionals.
As surprising as it may seem, wearing gloves does not necessarily ensure better hygiene. The problem mainly lies in the false sense of security they provide. During a busy day in the shop with a constant flow of customers, it’s easy to become less vigilant and forget to change them, particularly when they still look clean. This widely adopted practice in the industry should be approached with caution…
One might think that wearing gloves guarantees cleanliness. In reality, they can even create a false sense of security. The real key lies in simple, repeated actions. Washing hands frequently and staying mindful during each handling are where the true difference is made.
