No scale or measuring cup at hand? No worries, this no-fuss fluffy pancake recipe doesn’t require them!

Consider how a pastry chef like Pierre Hermé could manage to weigh 37 grams of water and 80 grams of egg whites for his famous Mogador macarons without a scale. However, everyday home bakers, who mostly bake for fun, might find themselves without these tools.
This issue isn’t just for those who tend to have cluttered kitchen cabinets and can’t find their measuring cup when Pancake Day rolls around. It also arises when wanting to bake away from home. Whether you’re staying at a microwave-meal lover’s Airbnb without the proper kitchenware, or spending a weekend at a friend’s place and planning to prepare a Sunday brunch without turning their kitchen upside down, the challenge remains.
Obviously, the absence of a scale or measuring cup limits the options, but it doesn’t make baking impossible. Take the classic yogurt cake, where the empty yogurt container serves as a measuring cup. Did you know you can apply the same concept to make incredibly soft pancakes? This is exactly what Bouchra from the blog Ma fleur d’oranger does with her quick and foolproof recipe.
First, empty a pot of plain or vanilla yogurt into a separate bowl – you’ll use this as your measuring unit. In a large mixing bowl, combine 2 pots of flour, 2 tablespoons of sugar, 1 teaspoon of vanilla sugar, 1 teaspoon of baking powder, and a pinch of salt. Next, add 2 large lightly beaten eggs, ½ pot of water, 2 pots of yogurt, and 1 teaspoon of orange blossom water. Whisk everything together until the batter is smooth and free of lumps. Then cook your pancakes in a greased non-stick skillet over medium heat, pouring small ladles of batter and flipping them once bubbles form on the surface.
Tip: for even fluffier pancakes, let the batter rest in the refrigerator for an hour. But if you’re in a hurry, go ahead and cook them right away! According to the blogger: “you can perfectly cook them as soon as the batter is ready”, and you’ll still get fluffy pancakes “every time”.
