A spoonful of paradise. With its coconut aroma, the Caribbean flan instantly conjures images of the sun and tropics. Made with sweetened condensed milk, coconut milk, and eggs, it’s slowly baked in a water bath over a caramel base until it achieves a texture that’s both firm and creamy. It’s a dessert that’s completely irresistible… except maybe to your waistline, as a single serving can pack a hefty 300 to 350 calories!
Why the heavy calorie count? The sweetened condensed milk and caramel contribute a significant amount of sugar. Coconut milk, with its 17% fat content, adds fat, not to mention the often-added shredded coconut. In short, it’s quite the indulgence…
For those who love coconut (but aren’t quite ready to switch to pineapple carpaccio), we might have found the perfect compromise. A feather-light dessert with drastically reduced ingredients, and what’s more, it’s no-bake, so it’s super easy to prepare. There’s no risk of it curdling or releasing water into the dish!
Devised by Nadine, the “coco-choco bomb” only requires some prep the night before… and wrapping two ramekins with film. Done? Now, just mix 150 g of skyr with 40 g of shredded coconut and 15 g of agave syrup (or another liquid sweetener of your choice, preferably with a neutral flavor to not overpower the aromas, like acacia honey for example). Divide the mixture into the two ramekins, press firmly, and refrigerate overnight. The next day, simply unmold them onto dessert plates… and drizzle each with a square of melted dark chocolate for even more pleasure.
Why is it better? Thanks to the skyr, which contains no fat, this little “coco-chocolate bomb” saves on lipids. It’s also low in sugar, which helps cut down on carbohydrates. In the end, it significantly lowers the calorie count compared to the Caribbean flan, even if its name might suggest otherwise! According to Nadine, one serving now only contains 233 calories with the chocolate topping, and just 197 calories without. It’s great to enjoy a light-hearted dessert under the palm trees at the end of a meal!
