But a common question arises when it comes to cooking: is the skin edible?
The skin of the salmon is indeed edible and even a delicacy for many enthusiasts. When crisped up in a pan, it offers a delightful crunch and an added texture to the palate. However, there’s also a health consideration. Like many fatty fish, salmon may contain persistent pollutants such as PCBs or methylmercury. These substances tend to accumulate more in fatty parts, especially in the skin. Therefore, it might be prudent to remove the skin, especially when cooking for vulnerable groups like pregnant women or young children.
If the fishmonger hasn’t already removed it, there’s a way to peel off the skin without damaging the flesh. The traditional technique used by professionals involves sliding a knife blade right between the flesh and the skin and gently running it along the fillet to separate them neatly. Yet, there’s an even simpler and safer method that doesn’t require handling a knife.
“Boil a pot of water and gently pour it over the salmon skin,” advises Steven Wong, a salmon expert and fishmonger, as reported by Real Simple. “The skin will slightly lift, and you can almost peel it off with your fingers. Start by testing a small section of the salmon to ensure the water is hot enough. You should then be able to peel off all the skin. If not, repeat the process with more hot water, and you’ll find it comes off easily.” Removing salmon skin without risking a cut is definitely a more pleasant experience…
