With its quivering texture and milky flavor, panna cotta stands alongside tiramisu as one of the most beloved Italian desserts. Whether served with a berry coulis, fresh mango pieces, or homemade caramel, it captivates with both its freshness and elegance.
The recipe combines simple ingredients: cream, sugar, vanilla… and a gelling agent to help it set. This transforms it into a dessert that’s both firm and creamy after chilling in the fridge for a few hours. Nowadays, gelatin is almost always the gelling agent of choice. However, those who prefer plant-based options often turn to agar-agar, a substance derived from red algae.
Yet, some professionals skip both of these options. On her Instagram, pastry chef Claire Heitzler reminds us that traditional panna cotta is actually made with… egg whites. It’s the egg whites that naturally provide the dessert’s structure, while also giving it a smooth and delicate texture in your mouth.
Interested in trying her recipe at home? Start by bringing 500 g of cream to a boil with 60 g of granulated sugar and the seeds from a scraped vanilla pod. Meanwhile, gently whisk 120 g of egg whites just enough to loosen them without reaching soft peaks. Gradually pour the hot vanilla-infused cream over the egg whites while stirring to blend smoothly. Divide the mixture into four ramekins or glasses, filling them three-quarters full, then bake in a water bath in a preheated convection oven at 150°C (300°F) for about 30 minutes. Allow to cool before refrigerating the desserts for at least 3 hours. Finally, top them with your favorite garnishes, such as chocolate sauce, strawberry compote, or passion fruit.
It turns out that even without gelatin or agar-agar, you can create a panna cotta that rivals the best from any Italian trattoria. This might just shake up some long-held beliefs about this classic Italian dish!
