Because of their insatiable sweet tooth, you’re left with nothing for breakfast but a dry piece of toast. You have apricots, peaches, strawberries… all sitting in the fruit basket, but you don’t have the energy to start making a new batch of jam. And even if you made it now, between the cooking and cooling time, it wouldn’t be ready until tomorrow… unless you know the right trick! With this clever technique, you can have jam ready in just 5 minutes.
If you’re short on time or just don’t feel like cooking up a batch of traditional jam, this recipe is perfect for you. Introducing “crufiture,” as coined by a content creator. Here, no pot is necessary: as the name suggests, the fruit remains raw, which also helps to preserve more of their vitamins and minerals. Once the fruits are thoroughly washed, roughly chop them into pieces and place them in the bowl of a food processor or blender. You can add a bit of sugar, honey, or agave syrup to taste, blend it up, and then add a natural gelling agent: chia seeds! Unlike agar-agar, which needs to be boiled and cooled to activate, chia seeds begin to gel upon contact with any liquid. Simply mix them into the blended fruit, let them swell for a few minutes, and blend again. Typically, you’d use about one tablespoon of chia seeds for every 200g of blended fruit. This results in a thick purée, quite similar to a jelly-like jam. It might not be traditional jam, but it’s certainly a great quick fix!
No longer do you have to wait hours (or even until the next day) to satisfy a craving for a fruity spread. With crufiture, you say goodbye to long cooking times and hello to simplicity. In just a few minutes and without turning on a stove, you can whip up a tasty, vitamin-packed, and perfectly spreadable concoction. It’s enough to turn a grumpy morning into a sweet indulgence… even if someone has already raided the last jar!
Note: crufiture should be consumed quickly. Since it’s not cooked, it only keeps for about 2-3 days in the refrigerator.
