“Half the time, we’re let down by the shipments” – a fishmonger reveals the name of the hardest fish to find fresh at the market.

Shopping at the market is usually for stocking up on fresh goods. Unfortunately, it’s a misconception to assume that all the fruits, vegetables, poultry, and fish on display are at their peak freshness. Some items are appealing due to their low prices, but this often masks a significant downside: compromised freshness. To help consumers avoid a poor choice, this fishmonger has shared which fish is typically the least fresh at the market. According to his experience, it’s the species most often found in poor condition at the stall.

Half the time, we’re disappointed by the shipments,” shares Arthur Viot in his video, a fishmonger at the covered market of Saint-Germain-des-Prés (Paris 6th district). And for good reason: this type of fish is one of the most delicate and thus one of the most frequently deteriorated in markets. “It’s a shame, because this fish tastes incredible when it’s caught properly!” laments the fishmonger. But precisely, that is where the problem lies: the fishing method is rarely suitable: “Upon being caught, this fish reacts in a remarkable way: it starts to heat up, explains the expert. It’s a characteristic of this species. The problem is that if it’s not cooled down quickly, it deteriorates very fast.” As a result, it’s generally found in poor condition, sold at a low price. The fish in question is mackerel, known for its strong flavor, sometimes too strong. However, when it is truly fresh, its taste isn’t so overpowering! To achieve this, fishermen must immerse the mackerels in a tank of ice water immediately after capture, the fishmonger notes. It’s rare, but it still happens, the expert clarifies.

To recognize a high-quality, properly caught mackerel, just pay attention to these features. A fresh fish stands upright and doesn’t slump when held, its flesh and fins are firm, its eyes are clear and not milky, it doesn’t smell bad, and it has been gutted beforehand. If it meets all these criteria, then you’ve really scored a great deal!
