Serving ribeye steak or merguez sausages with fries isn’t exactly refreshing. However, this dietitian-approved potato salad is perfect for summer barbecues!

At last, barbecue season is officially here! You’ve eagerly awaited its return, almost chewing at the bit all winter long. Even the social joys of raclette evenings couldn’t make you forget the bliss of Sunday grilling with friends. Rediscovering the unique taste of meats cooked over coals, enthusiastically tackling a massive ribeye, or methodically removing beef cubes from skewers—how much you’ve missed these delicious moments.

It goes without saying that in these all-too-rare moments, you indulge without restraint. There’s no way you’re trimming the fat off that ribeye (that’s the best part!), nor can you resist a crispy strip of pork belly. You leave the flank steak and chicken breast to others, focusing solely on caramelized pork ribs loaded with mustard and sweet soy sauce. Even if it means suffering some digestive discomfort during the meal, especially under the blazing sun. After all, who thought eating so heavy in such heat was a good idea?

But as a die-hard carnivore, giving up your favorite cuts is out of the question. You might, however, consider skipping the fries. A fresher, lighter side dish could certainly ease your stomach, right? Without resorting to the austerity of a mere bowl of lettuce—you need to feed your frame, after all!

Refreshing, filling, tasty, and balanced, dietitian Ysaline Benakli’s (@ysalinediet) potato salad is the ideal accompaniment to any barbecue. For 2 servings, the nutrition expert combines in her salad bowl 4 grated hard-boiled eggs, 250 g of cooked potatoes, 1/2 cucumber, 5 radishes, 100 g of red cabbage, 1 shallot, and some capers. She binds all the ingredients with a creamy dressing made of 2 tablespoons of Greek yogurt, 2 tablespoons of olive oil, 2 tablespoons of vinegar, fresh parsley, salt, and pepper. Just gently mix everything and chill in the refrigerator until it’s time to eat. Trust us, it’ll go down much easier with your sausages…

With such a fresh and thoughtfully prepared salad, you’re all set to fully enjoy summer barbecues without compromising on pleasure or lightness. The perfect balance to savor your favorite meats while taking care of your digestion. Sometimes, the right side dish is all it takes to turn a simple meal into a well-managed feast.
