With a flavor reminiscent of chestnuts and a soft, slightly sweet texture, sweet potatoes live up to their name. Originating from Latin America and brought back by Christopher Columbus, this tuber is a favorite among both kids and adults. Packed with beta-carotene, and vitamins A and C, sweet potatoes are not only delicious but also nutritious. To make them a hit at family meals, Laurent Mariotte has crafted the ideal recipe: fries! However, instead of deep frying them, he opts for a healthier alternative—baking. His method brings out a delicious caramelized finish to the fries. The secret lies in a homemade condiment that makes all the difference, and it’s likely already in your pantry!
“The concentrated taste of sweet potatoes is just mouthwatering,” exclaims Laurent Mariotte in his Instagram video. And rightly so! His secret blend allows the fries to roast and caramelize simultaneously. To achieve this, he starts by cutting the potatoes into uniformly sized sticks to ensure even cooking. He then tosses them in a large bowl with a generous drizzle of olive oil, using clean hands to spread the oil evenly. For seasoning, he skips the usual salt and pepper. Instead, he prepares a homemade condiment with a tablespoon of Mexican spices—cumin, paprika, oregano, and Cayenne pepper—and adds brown sugar! This is the key to achieving the caramelization during baking, explains Mariotte. Just a spoonful of sugar is enough, he notes.
After thoroughly mixing the condiment with the fries, he spreads them out on a lined baking sheet, making sure they don’t overlap. This is crucial for them to cook properly, he points out. Then, he seasons with salt and pepper and bakes them for 30 to 40 minutes at 392°F (200°C). The end result is delectably glazed fries with intensified flavors. Now, it’s your turn to try!
