When you spotted those lovely green beans at the market, you didn’t hesitate for a second. “Give me a 500g bag!“, you asked the farmer. But with such a large amount to use up, you’re starting to run out of ideas. Sautéed with garlic, tomato sauce, or just steamed with a dab of butter… After a week, you’ve run through all your usual recipes. You’re in luck! On “Petits plats en équilibre,” Laurent Mariotte has just whipped up an original recipe to enjoy green beans in a new way. It’s fresh, tasty, super crunchy, and moreover, ready in just 10 minutes!
Ingredients for Laurent Mariotte’s Green Beans
To enhance the green beans, Laurent Mariotte prepares them in a salad with figs! “Here’s a fruit that pairs beautifully with this vegetable“, the host hints. In a salad with cheese, this sweet-salty combination is a hit every time. Here are the quantities to delight 4 to 6 people.
- 500g of green beans
- 6 fresh figs
- 120g of sheep’s milk cheese (tomme de brebis)
- 40g of whole almonds
For the dressing:
- 1 tsp of honey
- 1 tbsp of balsamic vinegar
- 3 tbsp of olive oil
- Sea salt, pepper
Steps to Prepare Laurent Mariotte’s Green Beans
Before you start, trim the green beans by hand or with a knife, aligning them on a cutting board for speed.
- Cook the trimmed green beans for 8 minutes in boiling salted water. Then, immerse them in a bowl of ice water to cool for 3 minutes.
- In a bowl, mix the dressing ingredients and set aside.
- In a skillet, toast the almonds until they are golden and then crush them.
4. Wash, quarter the figs and slice the cheese into sticks.
5. Combine the green beans, fig quarters, cheese sticks, and almonds in a bowl and season with pepper.
Toss the salad with the dressing just before serving, mix well and you’re done. Enjoy this beautiful late summer salad!
