For a delightful twist on the classic mashed potatoes, this alternative keeps things light and pairs beautifully with chestnut-stuffed turkey!

Oysters, foie gras, chestnut-stuffed turkey, and a rich Yule log dessert… Holiday feasts can be as overwhelming as dealing with your in-laws. To make it through to dessert without feeling weighed down, there are a few strategies you can employ at the dinner table. First off, go easy on the foie gras during appetizers: moderation is key if you don’t want your stomach feeling the same way by year’s end. Additionally, there are clever ways to lighten the load on your stomach. Instead of traditional mashed potatoes, consider a lighter alternative to accompany the turkey. Potatoes can be quite heavy, especially in mashed form. Fortunately, a chef has shared a recipe just for the occasion. It’s half the calories and complements the chestnut-stuffed turkey wonderfully!

In this video, Chef Christophe Forget prepares an ideal light mash for the holidays. “It pairs perfectly with poultry,” he notes. Here, the chef swaps out potatoes for a fall vegetable that is half as caloric. With its subtle sweet chestnut flavor, it pleasantly contrasts with the turkey and echoes the chestnut stuffing… the butternut squash. With only 45 calories per 100g (compared to about 80 for potatoes), its cooked flesh creates a creamy mash that doesn’t burden digestion.

Cooking it is a breeze: start by sautéing butternut squash cubes and chopped onion in a pot with a drizzle of olive oil. Chef Forget also recommends adding a small diced potato: “It helps bind the mash together,” he explains. No need for butter or milk: just add vegetable broth to cover and let simmer covered for 15 to 20 minutes. Then, simply process everything in a food mill or blender. A pinch of sea salt, some grated nutmeg, or a bit of allspice, and you’ve got the perfect Christmas mash!

With this butternut squash mash that lightens the plate without compromising flavor, you maintain the meal’s magic… and save some room for what’s next. It lets you finish the dinner without collapsing into your chair or dreading the after-dinner drink. In short, a simple trick that makes a big difference, allowing you to enjoy the celebration to the last bite.
