Traditional recipes typically rely heavily on oil or butter to keep the cake tender, which can make the calorie count skyrocket. However, Eugénie, known as @ginie.healthylife on Instagram, shares a clever trick to cut down on fats. She substitutes traditional fats with 0% fat yogurt cheese in her batter. This ingredient is naturally high in water and protein, which keeps the cake moist without adding weight (clocking in at only 50 calories per 100 grams). When sliced into 12 pieces, each slice of her cake contains only about 90 calories—variable depending on the fillings used.
To make this cake, start by whisking 3 eggs with 200 grams of 0% fat yogurt cheese (or skyr or plain yogurt, depending on what you have), then season with salt and pepper. Next, mix in 90 grams of flour and a half packet of baking powder until the batter is smooth. Add any fillings of your choice. Eugénie prefers using 6 to 7 chopped sun-dried tomatoes, 100 grams of crumbled feta, and a few chopped chives.
Pour the mixture into a cake mold (or two smaller molds to decrease baking time) and bake for about 45 minutes at 175°C in a preheated oven (reduce the time to about 30 minutes if using smaller molds). This light base allows you to indulge a bit more on rich cheeses and bits of bacon…
