Fondue, the second most beloved mountain dish in France following raclette, has made its way from Alpine peaks to friendly gatherings and festive tables. This economical, warm, and social meal has easily won hearts everywhere.

The secret to a perfect fondue primarily lies in the choice of ingredients, especially the cheeses. Traditional choices include regional pressed cheeses like Emmental, Abondance, and Beaufort, though some recipes daringly incorporate Comté from the Jura region or Vacherin from Swiss neighbors—there’s no room for nationalism in the realm of delicacies. Regardless of the choice, the rule of thumb is to remain generous, allotting roughly 200 grams per person.

A dry local white wine is also essential for fondue. Its acidity balances the richness of the cheese, its fresh and fruity notes complement the molten cheeses beautifully, and it helps prevent protein coagulation (thus avoiding the dreaded “lump” formation). While some connoisseurs believe sparkling wines add a touch of lightness to the palate, taste preferences can vary widely.

And what about the bread? To avoid any penalties at the first dip of the fork, opt for bread with a dense crumb and a crunchy crust that better captures and holds the cheese (preventing it from falling to the bottom of the pot). Breads like chestnut, buckwheat, or those with dried fruits are particularly well-suited for this purpose.

However, cooking also involves closely guarded secrets passed down through generations. In an interview on the show “Météo à la Carte” on France 3, Christophe, a grocer from Haute-Savoie, shared his “family touch” that consistently elevates his fondue. At the very end of preparation, he always adds a piece of sugar to balance the flavors: “This is to counteract the cheese’s acidity and add some sweetness,” he explains.
