Meat lovers may already be familiar with it. It’s the secret sauce served with rib steak in bistros, like the famous Relais de L’Entrecôte in Paris. Well, guess what? Now you can make it at home. Culinary author Lou Elsener, also known as Louloukitchen on Instagram, has shared a recipe that comes very close, and it’s super easy to make. “I always prepare this sauce with rib steaks, cutlets, etc. There’s nothing better on meat!“, she reveals in her video. Beware, you might just get addicted too!
Ingredients for the Iconic Bistro Sauce
- 50 g of butter
- 2 shallots
- 3 or 4 anchovy fillets
- 1 tsp of capers
- 40 g of flat-leaf parsley
- 40 g of fresh tarragon
- 2 fresh basil leaves
- 1 egg yolk
- 1 tbsp of lemon juice
- 1 tbsp of soy sauce
How to Make the Iconic Bistro Sauce
For this recipe, you’ll need a saucepan and a mixer (or blender).
- Finely chop the shallots and roughly chop the anchovy fillets with a knife.
- Melt the butter in the saucepan, then add the shallots and anchovies. Sauté for three to four minutes on medium heat, stirring, and then remove from heat.
- Roughly chop the tarragon, parsley, basil, and capers, and add them to the saucepan off the heat.
- In parallel, whisk the egg yolk with the lemon juice and soy sauce in a bowl until smooth. Incorporate this mixture into the sauce and stir well.
- Place the sauce in your blender and blend, but not for too long. The goal is to achieve a creamy sauce, but not necessarily completely smooth.
And there you have it! All that’s left is to gently reheat the sauce on low heat with your grilled meat just before serving. The taste test? “It’s truly incredible!“, Lou Elsener raves. “I promise you won’t be able to live without it“. Let us know what you think!
