This seemingly simple dish is your nemesis, your Achilles’ heel. You’ve tried every cooking method imaginable: boiling, absorption, and even steaming, but no matter what, your rice always ends up overdone (if not downright mushy). Forget those past disasters, as Norbert Tarayre has shared his foolproof cooking method, learned from a master of the craft: a Japanese chef. Once you try it, you’ll never look back!
“This is the best way to cook rice,” Norbert Tarayre assures in his YouTube video. Here, the chef presents a hassle-free cooking process that guarantees great results with minimal effort. It involves three very simple steps. First, the chef washes the rice five times, until the water runs clear. This crucial step purifies the grain and shortens the cooking time. Once that’s done, he places the rice in a pot with cold water. The ratio should be one part rice to 1.5 parts water, no more. He covers the pot with a lid and sets it on high heat until it boils. “From that point on, do not touch it,” insists Norbert Tarayre. “The real trick and magic of this method is to never lift the lid.” Once the water has boiled, the heat is reduced to low, around two or three, the chef notes. Then, let it simmer gently, covered, for 20 minutes. At the end of cooking, remove the pot from the heat, but not the lid: let the rice sit covered for another 10 minutes, continues Norbert Tarayre. Finally, just add a knob of butter, and voila: your perfect rice is ready to serve!
Good to know: This cooking method works just as well with traditional rices like basmati as it does with round or sushi rice, the chef points out.
