Of course, this doesn’t mean emptying your entire salt shaker into the mixing bowl, as that would result in a cake more suitable for a savory appetizer alongside olive bread. Just a hint does the trick. Yet, this seemingly minor addition is far from trivial.
While often touted as a flavor enhancer, salt’s primary role here is to heighten the sweetness of the dish and moderate any bitterness. It also stimulates our taste buds through its salivating effect. Additionally, it brings a certain elasticity to the dough by interacting with the gluten network. For these purposes, fine salt is used as it dissolves better in mixtures. However, as a finishing touch, a sprinkle of sea salt can vividly enhance your creations, much like in some chocolate bars…
What about chocolate cakes in particular? Whether they’re fudgy, gooey, or soft, a pinch of salt is also trusted to amplify the chocolate flavor. However, American chef and author Ina Garten believes there is a better option. According to her, one ingredient can more effectively reveal the depth and complexity of cocoa in baked goods: coffee!
When properly measured, it leaves no aftertaste: the chocolate just seems… more chocolatey. The key is using it correctly. The platform Tasting Table elaborates further on her technique. For recipes that already call for hot water or milk, she suggests substituting them with strong coffee. On the other hand, for more delicate desserts like mousse or buttercream, instant coffee powder is preferable as it blends seamlessly without altering the texture. It’s also worth mentioning that liquid coffee extracts are available, which can be directly mixed into the batter to effortlessly add that subtle aromatic touch.
Despite salt’s pervasive use, it doesn’t enhance the chocolate flavors in cakes as brilliantly as coffee does. Keep this in mind for your next batch of brownies or chocolate muffins!
