Many people find green beans, like many green vegetables, to be quite bland. However, with the right recipe, they can be transformed into a delightful dish!
Even if you’re a fan of green vegetables, you might find yourself smothering them in béchamel and gruyère cheese during the winter months. This is a common way to enjoy Swiss chard, leeks, broccoli, and green cabbage. But green beans? They’re a different story altogether. Traditionally, you might not think to top vegetables with grated cheese. The best method you’ve discovered? Sautéing them in butter with garlic and chopped parsley. Yet, often, you enjoy them just steamed. Thankfully, social media influencer Lou Elsener, known as @louloukitchen_, offers a variation that elevates green beans to a new level.
“You’ll never want to eat green beans any other way,” promises the content creator. When green beans aren’t in season, she buys them frozen. Her favorites? The extra-fine frozen green beans from Picard, though any brand will do. To enhance them, she prefers to cook them in a pan with tomato paste, garlic, and onions, which have been pre-fried in sunflower oil. After adding some spices and fresh herbs, her green beans are absolutely irresistible.
For this recipe, you will need fresh or frozen green beans, garlic, onions, a bit of tomato paste, spices, and aromatic herbs. Here are the quantities for 3 to 4 people:
- 450 grams of frozen green beans
- 1 tablespoon of tomato paste
- 2 yellow onions
- 3 cloves of garlic
- A few pinches of ground paprika, turmeric, and ginger
- A few sprigs of parsley or cilantro
- 1 tablespoon of sunflower oil
1. In a skillet, fry the tomato paste and minced garlic in a bit of sunflower oil. Then add the chopped onions.
2. Once the onions are slightly golden, add the frozen green beans that have been soaked in water. “They won’t be completely thawed, but that’s okay. They will release some water, which is normal,” explains Lou.
3. Cook for 20 minutes, then add ground paprika, turmeric, and ginger. Continue cooking until the green beans are both well-cooked and nicely grilled.
After cooking, you can add chopped parsley or cilantro. For even more flavor, Lou suggests sprinkling some sea salt flakes on top before serving. You’ll find that these flavorful and slightly crispy green beans will please everyone at the table!
