Banana bread is the new eco-friendly snack. It’s perfect for using up those overripe bananas that have been sitting in your fruit bowl too long. Straddling the line between cake and bread, banana bread ticks all the boxes for a trendy recipe. When properly made, it’s nutritious, filling (one slice can keep you going all morning), provides sustained energy (thanks to a combination of simple and complex sugars), portable (easily transported in an airtight container, stays fresh for 2-3 days at room temperature and freezes well), and is incredibly cost-effective. Not only does it help reduce food waste, but it also utilizes staple pantry items that most people have at home.

While some recipes might be more elaborate, others stick to the basics. Take, for example, Maureen Valade, known as @lacuisineetmaureen on Instagram. “I’ve tried several, but the one I always come back to is this one because it’s super simple,” she confesses on her Instagram. Indeed, her countertop features just a handful of ingredients. Specifically, five: bananas (of course!), eggs, flour, baking powder, and dark chocolate. No fats, no sugar, no milk—surprising to some, yet the texture is still incredibly moist…

If you’re tempted to try her version for your snack time, Maureen starts by mashing 2 ripe bananas: “the riper they are, the sweeter they’ll be, and that’s better,” she explains. She then adds 4 eggs, followed by 200 g of flour and a packet of baking powder, mixing everything thoroughly. She finishes by folding in 100 g of coarsely chopped dark chocolate (using 70% or 80% cocoa) before pouring the mixture into a loaf pan lined with parchment paper and baking it for 30 minutes at 350°F (180°C).

With a prep time of just about 5 minutes, minimal ingredients, and a result that’s irresistibly fluffy, this has got to be one of the simplest banana bread recipes in the world. No more excuses for letting those bananas go to waste!
