Perfectly caramelized on top and delightfully fluffy inside… Let us share the fail-proof recipe for upside-down pineapple cake and a grandmother’s secret for the perfect texture!

Simple yet incredibly effective. That’s the essence of the upside-down pineapple cake. Using canned pineapple and a few pantry staples, this easy and quick dessert always wins hearts at birthday parties. But it has to be done right… A dry cake is a letdown. Luckily, recipe creator and mom Monelle Godaert (also known as @not_so_superflu on Instagram) has shared her grandmother’s foolproof recipe and a little trick for an ultra-moist texture. You’re going to love it!

Ingredients for the Foolproof Upside-Down Pineapple Cake

Don’t throw away the can after you’ve used the pineapple slices; you’ll need it later!

  • 80 g of brown sugar for the syrup
  • 1 can of pineapple slices
  • 125 g of brown sugar for the batter
  • 125 g of softened butter
  • 4 eggs
  • 200 g of flour
  • 1 tsp of baking powder
  • 1 tsp of liquid or powdered vanilla

How to Make the Foolproof Upside-Down Pineapple Cake

You’ll need a large skillet or a wide sauté pan that is oven-safe for this recipe.

  1. Melt 80 g of brown sugar in a large skillet and arrange the pineapple slices on top (set the pineapple juice aside). Cook for 2-3 minutes to caramelize.
  2. In a mixing bowl, blend 125 g of brown sugar with the softened butter until smooth.
  3. Add the eggs one at a time, then fold in the sifted flour, baking powder, and vanilla.
  4. Pour this batter over the caramelized pineapples directly in the skillet.
  5. Bake for 35 minutes in an oven preheated to 180°C (356°F).

Once out of the oven, immediately turn the cake onto a plate, poke small holes in it with a fork, and pour the reserved pineapple syrup over it. This is the key to achieving that unmatched texture! “It’s just so moist… truly a marvel,” confirms Monelle Godaert in her Instagram video. Now it’s your turn!

And there you have it, the secret to consistently making a melt-in-your-mouth upside-down pineapple cake. Easy to prepare and irresistibly moist thanks to Monelle Godaert’s little secret, this dessert is an old-fashioned favorite that never goes out of style!
