Ingredients for the Foolproof Upside-Down Pineapple Cake
Don’t throw away the can after you’ve used the pineapple slices; you’ll need it later!
- 80 g of brown sugar for the syrup
- 1 can of pineapple slices
- 125 g of brown sugar for the batter
- 125 g of softened butter
- 4 eggs
- 200 g of flour
- 1 tsp of baking powder
- 1 tsp of liquid or powdered vanilla
How to Make the Foolproof Upside-Down Pineapple Cake
You’ll need a large skillet or a wide sauté pan that is oven-safe for this recipe.
- Melt 80 g of brown sugar in a large skillet and arrange the pineapple slices on top (set the pineapple juice aside). Cook for 2-3 minutes to caramelize.
- In a mixing bowl, blend 125 g of brown sugar with the softened butter until smooth.
- Add the eggs one at a time, then fold in the sifted flour, baking powder, and vanilla.
- Pour this batter over the caramelized pineapples directly in the skillet.
- Bake for 35 minutes in an oven preheated to 180°C (356°F).
Once out of the oven, immediately turn the cake onto a plate, poke small holes in it with a fork, and pour the reserved pineapple syrup over it.
