Ingredients for Quick Sponge Cake

Here are the amounts you’ll need for a cake mold about 25-30 cm long.

  • 8 cl of milk (about one glass)
  • 50 g of butter
  • 80 g of flour
  • 4 eggs
  • 1 tsp of liquid vanilla extract
  • 80 g of powdered sugar
  • Lemon juice

How to Make the Quick Sponge Cake

You’ll need an electric mixer or a stand mixer for this recipe, as you’ll be whipping egg whites to stiff peaks.

  1. Preheat your oven to 170°C (338°F).
  2. In a small saucepan, melt the butter with the milk over low heat. Stir with a whisk until fully dissolved.
  3. Off the heat, add the sifted flour and stir well until smooth.
  4. Separate the egg whites from the yolks. Add the yolks to the previous mixture along with the liquid vanilla and set the whites aside.

5. Using a stand mixer or an electric mixer, beat the egg whites with a dash of lemon juice (a few drops will do). When they start to foam, gradually add the powdered sugar to firm them up. Once they are stiff, fold them into the batter with a spatula. Add the whites gradually to avoid deflating them, suggests Monelle Godaert.

6. Pour the batter into a lined loaf pan and bake for about 30 minutes.
