This healthier version is brought to you by Monelle Godaert, a mom and culinary influencer known on TikTok as @not_so_superflu. “It’s incredibly easy and delicious,” she raves. Ingredients for Monelle Godaert’s Poireauflette

As you might guess, potatoes are swapped out for leeks in this recipe. But that’s not the only tweak! Monelle Godaert incorporates several tricks to lighten up the dish.

  • 5 leek whites
  • 1 onion
  • 200 g of lean bacon
  • ½ carton of light cream
  • 2/3 of a Reblochon cheese, sliced thinly
  • A drizzle of olive oil
  • Freshly ground pepper

Steps to Prepare Monelle Godaert’s Poireauflette

To make this recipe, it’s best to use a food processor for slicing, as shown in the video. You’ll also need a salad spinner or a clean cloth to dry the leeks, and a sauté pan or a wide oven-safe pan for cooking.

  1. Slice the leek whites and onion using a food processor and dry them using a salad spinner, or alternatively, by squeezing them in a cloth.
  2. In a pan, brown the bacon, let it release its fat, then drain it off.
  3. Add the sliced leeks and onion to the pan, drizzle a little olive oil, and let them soften for a few minutes, stirring well.
  4. Pour the half carton of light cream over the leeks, season generously with pepper, mix, and arrange the thin slices of Reblochon on top.
  5. Bake under a grill for 4-5 minutes or until the top is nicely browned.

What’s the verdict at tasting? The melt-in-your-mouth leeks combined with the crispy-creamy Reblochon… Despite what traditionalists might say, this poireauflette stands proud next to the traditional tartiflette!
