From spur-of-the-moment picnics to last-minute happy hours, this quick quiche recipe comes to the rescue on any occasion, and has been a go-to for years.

Equipped with an XXL cooler, an impressive array of chip bags and cherry tomatoes, and a large checkered tablecloth, you’re all set for the weekend’s main event: the season’s first picnic. Once again, you’ve gone all out. Dozens of toasts, a tabbouleh for fifteen, and a giant chocolate fondant. Nestled between the baguettes and paper plates is the centerpiece of the meal: a perfectly golden homemade quiche. Your friends are amazed; even a caterer couldn’t have done better!

Your secret weapon? A super simple quiche recipe you found on the @not_so_superflu account. Although Monelle Godaert borrowed it from chef Éric Bouchenoire, some followers believe its origins lie elsewhere. “For me, it’s the famous crustless Tupperware® quiche, which I’ve been making for over 50 years! It’s endlessly adaptable, timeless, foolproof, quick, and always delicious”, shares one of them. “It’s funny, it’s an old recipe from Tupperware®”, “I’ve been making the Tupperware® crustless quiche since the 80s”, explain two others.

No matter its true lineage, this quiche definitely wins everyone over. And for good reason! You don’t even need a pastry crust: everything comes together in just one mixing bowl. Made with a batter to which flour is added to keep it stable during baking, this quiche is the easiest in the world to make. Here’s how…

Ingredients for Monelle Godaert’s Crustless Quiche

  • 100 grams of flour
  • 3 eggs
  • 50 centiliters of milk
  • 150 grams of bacon bits
  • 150 grams of white ham
  • 150 grams of grated Comté cheese
How to Prepare Monelle Godaert’s Crustless Quiche

1. In a mixing bowl, combine the flour and eggs, then gradually add the milk. Sprinkle in two pinches of nutmeg and a bit of pepper and whisk thoroughly.

2. Sauté the bacon bits in a pan, then incorporate them into the mixture. Next, add the white ham, previously chopped into small pieces, followed by the grated Comté cheese, and stir everything well.

3. Pour the mixture into a well-buttered baking dish and bake for 40 minutes at 350°F (180°C). The result? A quiche that’s beautifully golden on top and meltingly tender inside. You’ll see, everyone will be eager to grab a slice!
