Vanilla, strawberry, or chocolate? When summer arrives, ice cream shops are bustling. Whether it’s double scoop cones, whipped cream topped sundaes, fruity sorbets, or creamy ice cream, it’s hard to ignore the lure of a good ice cream as the heat rises. Nostalgic and indulgent, it remains a quintessential holiday treat, enjoyed while strolling along the waterfront or sitting at a café terrace.
And it’s not just us. Across the Mediterranean, Sicilians too indulge in their own frosty delights. However, instead of the richness of ice cream, they vastly prefer the coolness of granita. Considered an ancestor of gelato, it’s believed to have originated between the 9th and 10th centuries when Arabs flavored the snow from Mount Etna with fruit or flower syrups. Over the centuries, this concoction has been refined to become one of the island’s major specialties. Its delicately crystalline texture, made without cream, milk, or eggs, is as light as it is refreshing.
Granita isn’t just for dessert or snacks! As François-Régis Gaudry reminds us on France Inter, granita is also a popular breakfast treat, typically served with a soft brioche. The journalist and food critic even shares a quick version that’s as impressive as it is easy to prepare.
For six people, start by reducing 30 cl of a quality artisanal fruit juice or nectar (blackcurrant, apricot, etc.) in a saucepan over medium heat until it becomes a thick syrup. Allow it to cool completely. Then pour 600 g of ice cubes into a blender, add the cooled syrup and 2 tablespoons of sugar, and blend until you achieve a fine, flaky, and melting texture. “You really need to blend ice cubes straight from the freezer,” insists François-Régis Gaudry, otherwise, the granita will lose its characteristic grain. Serve immediately with a bowl of seasonal fruits – for instance, red berries with a blackcurrant granita – and enjoy right away, before the crystals begin to melt.
In Sicily, ice cream doesn’t necessarily need cream to be sensational: a spoonful of granita, and your afternoon snack suddenly takes on the air of dolce vita!
