Completely free of added sugar and hassle-free, this quick sorbet is the perfect solution for hot days. It’s child’s play to make, requiring only three ingredients!

With the recent heatwave, you might have thought about digging out your old ice cream maker. However, upon revisiting the instructions, you remembered why it had been gathering dust: “It’s like you need an engineering degree to operate this thing!” Indeed, the process requires some skill and, above all, a lot of patience… From needing to freeze the bowl overnight, preparing syrup, blending fruits, cooling time, and churning, it takes at least 24 hours in advance. A detail you hadn’t anticipated, especially on a day when temperatures are expected to soar above 86°F. Besides, you don’t even have all the necessary ingredients on hand: dextrose, stabilizing powder… You don’t even know where to get all that! For now, just leave your ice cream maker where it is because we have a much simpler sorbet recipe to share. Not only is it easy to prepare, but it also contains nothing but fruit!

Ingredients for Quick Sorbet

  • 350 g of hulled strawberries
  • 2 ripe bananas
  • A dash of lemon juice

Making the Quick Sorbet

To make this sorbet, you can use a standard food processor or a Thermomix.

  1. Chop the fruit into pieces, then freeze them for at least 4 to 5 hours.
  2. Afterward, put them into the food processor or Thermomix and add the lemon juice.

3. Begin blending gradually: start at medium speed for 15 seconds, then slowly increase to speeds 7 to 10 and continue for another 10 seconds, advises the creator. Remember to scrape down the sides in between steps. This gradual blending is the key to achieving the perfect texture. Even without an ice cream maker, “It’s super creamy!” she assures.
