  1. Prepare and cut the melon

    In a bowl, whisk the heavy cream with the sugar and lemon juice until smooth. Gently fold in the melon puree.

  3. Enhance the ice cream texture

    For an even airier texture, beat an egg white until stiff peaks form and fold it carefully into the mixture.
