    Slice the smoked salmon into strips and then into small rectangles. Finely chop the chives and dill.

    In a bowl, mix the lemon juice, ricotta, sour cream, and herbs. Optionally, add a bit of black pepper. Stir in the smoked salmon, reserving some for garnish. Mix well.
  3. To Finish

    Using a piping bag with a large nozzle, fill cocktail glasses with the mixture. This is what adds elegance to the verrine. Top with two rectangles of smoked salmon and a sprig of dill. Serve immediately.
