Quiche Lorraine is among your favorite dishes. You could eat it every night! Paired with a fresh green salad, it’s the perfect dinner. But if you’re aiming to eat light, this classic dish from the Lorraine region may not fit the bill—it’s far from the most diet-friendly option with its milk, eggs, cream, and bacon, all of which are high in fat and calories. A traditional slice of Quiche Lorraine packs between 400 and 500 calories. However, fitness and food influencer Aliénor Bérenger shows that you can significantly cut down on calories without sacrificing taste in her revamped recipe. “No cream here,” she notes, having found a delicious, low-calorie, high-protein substitute.

Instead of the traditionally used cream, which is particularly high in fat, she opts for a different dairy product. This substitute is four to five times less fatty and three times more protein-rich—a significant benefit for athletes. She uses cottage cheese, a trendy food item currently. Made from fresh milk that’s curdled and then drained, cottage cheese has a fresh taste and a unique texture, reminiscent of scrambled eggs, which adds a fresh, fluffy quality to the quiche. To make the filling, Aliénor beats three whole eggs with 180 grams of cottage cheese and 100 milliliters of milk. She seasons it with salt and pepper and adds diced ham, a less fatty alternative to bacon. Then, she pours the mixture over the pre-baked and pricked pastry crust and bakes it for 45 minutes at 170°C (338°F). And just like that, it’s ready to enjoy—light and delightful!

While it may not be the traditional Quiche Lorraine, this version has a lot to offer. It’s lighter, protein-rich, and still delicious, proving that a classic can be reinvented without losing its charm.
