White ham is a practical and economical staple in many refrigerators. However, not all packages offer the same nutritional and taste value. Que Choisir Ensemble (formerly UFC-Que Choisir) has scrutinized 24 of them, with one product standing out.

Whether in a grilled cheese sandwich, a regular sandwich, or a pasta dish, white ham is often chosen for its convenience. It is less fatty compared to other types of deli meats, relatively affordable, and universally liked, making it a permanent fixture in many American kitchens. Despite its simplicity, it’s important to remember that ham is still a processed, salted meat that often contains nitrites in many brands.

This is a detail worth paying attention to. In a report released in July 2022, the French Agency for Food, Environmental and Occupational Health & Safety (Anses) confirmed a link between the intake of nitrates and nitrites through processed meats and an increased risk of colorectal cancer. As such, they recommend minimizing exposure to these substances and advise limiting the intake of processed meats to about 5.3 ounces per week.

The label “no nitrite salts added” doesn’t always mean completely free from nitrates or nitrites. Some recipes use broths or plant extracts that are naturally high in nitrates, which can then be converted into nitrites. Anses has called for better consumer information regarding these not-so-innocent alternatives.

To provide clear guidance for shoppers, Que Choisir Ensemble (formerly UFC-Que Choisir) recently reviewed 24 cooked pork ham products from both national brands and store brands sold in supermarkets and organic stores. Updated in May 2026, this comparison included products with and without nitrites, organic and non-organic, and those with reduced salt content.

The hams were subjected to laboratory analyses focusing on their salt and protein content, as well as nitrate and nitrite residues. A blind taste test with a panel of 33 consumers also contributed to the evaluation.

At the bottom of the rankings, two products did not meet expectations: “Jambon cuit choix” Simpl (Carrefour) scored a meager 7.6/20, and “Jambon cuit choix” Prix Mini (U) performed slightly better at 9.4/20.

At the top end of the scale, the competition was close. Scoring 12.9/20, “Jambon supérieur -25% less salt, preserved without nitrite” by Monique Ranou from Intermarché took third place. It was just behind “The real superior ham without nitrite salt” from Biocoop, which scored 13.7/20. The top spot went to “Ham zero nitrite, preservative-free” by Fleury Michon, earning a commendable 14/20, setting a clear benchmark before the next serving of ham and noodles!

In conclusion, not all white hams are created equal. Considering the amount of salt, presence of nitrites, and nutritional qualities, it’s wise to read the label rather than picking a package out of habit. And even for the highest-rated ham, moderation remains key: like all deli meats, it should be consumed sparingly.
