Even dietitians crave a hearty ratatouille in the midst of winter! To satisfy this craving, they opt for a high-quality frozen version…

While we often emphasize the importance of seasonal cooking, it’s not about restricting culinary enthusiasts. Quite the opposite. This approach allows us to utilize fruits and vegetables when they are most flavorful, decreases our ecological footprint while bolstering our food independence (favoring local products over imports as much as possible), and also enhances our creativity and curiosity by exploring new flavors throughout the year.

However, our food cravings sometimes have their own timing. Like when we find ourselves dreaming of a delicious ratatouille in the dead of winter to brighten up our meals. Experience tells us that tomatoes available during this season, often watery, tend to be quite bland. Rather than laboring in the kitchen to prepare a dish that may end up disappointing, it’s often better to turn to a frozen version made with vegetables picked at peak ripeness, where the nutrients are well preserved. The challenge is to find a nutritionally acceptable option that isn’t too high in salt and free from controversial additives.

During her monthly shopping at Picard, dietitian-nutritionist Ysaline Benakli, known as @ysalinediet on Instagram, appears to have struck gold with the store’s organic cooked ratatouille. Made with extra virgin olive oil, it boasts an excellent composition. The nutrition expert particularly praises its low salt content for a prepared dish (0.44 g/100 g). As for additives, it only contains a small amount of organic rice starch, used as a thickener. Unlike many jarred ratatouilles, this recipe contains no added sugars. It thaws quickly (15 minutes in a pan, 20 minutes in the microwave) and is easy to portion for solo dinners. In short, it’s a freezer must-have when summer is long gone!

As we await the return of warmer days, this Picard ratatouille reminds us that we can adhere to seasonality without sacrificing flavor. It proves that with a little discernment, frozen food can indeed be a sensible choice: vegetables harvested at their peak, flawless composition, and quick cooking. All of these preserve the taste of summer even in the heart of November and bring a sunny touch to our winter meals without compromising our principles.
