Significantly lighter yet delightfully creamy, this mayonnaise is made without a single drop of oil. Not only is it less fattening, but it’s also much easier to make than traditional mayonnaise!
“How about some homemade mayo?” Yes, of course, you’re interested. You adore mayonnaise! Whether it’s with fries, in a sandwich, or even as a dip for raw veggies… you enjoy it with everything. However, it’s a different story for your stomach. Whenever you indulge, you feel bloated. And rightly so: mayonnaise is high in fat. Just one tablespoon contains about 11 grams of fat, which is about as much as a small croissant. From this perspective, it’s easy to see why it’s heavy on the stomach… and the scales. With nearly 700 kcal per 100 grams, mayonnaise is among the most calorie-dense sauces. But don’t worry, there’s a surprising alternative: a mayonnaise that doesn’t contain a single drop of oil, thanks to a tip from Chef Simone Zanoni!
Ingredients for Oil-Free Mayonnaise
Instead of raw egg yolks and oil, Simone Zanoni uses… hard-boiled eggs. Blended with a bit of water, vinegar, and mustard, they create an ultra-creamy sauce with a “texture very similar to mayonnaise,” according to the chef. In this recipe, he includes Tabasco, confit garlic, and capers, but you can choose any spices you like to flavor it.

- 4 eggs
- 2 to 3 tbsp of white vinegar
- 3 to 4 tbsp of cold water
- 4 cloves of confit garlic
- 1 tbsp of mustard
- 1 tbsp of capers
- A few drops of Tabasco
- Salt, pepper
How to Make Oil-Free Mayonnaise
You don’t need a whisk for this recipe: everything comes together in a blender!
- Boil the eggs for 10 minutes. Let them cool, then peel them.
- Place the peeled hard-boiled eggs in the blender along with the white vinegar, water, confit garlic, mustard, capers, Tabasco, salt, and pepper, and blend until smooth and creamy.
- Transfer the mayonnaise to a container and let it rest in the refrigerator for at least 2 hours. “As it cools, it will become firmer and more velvety,” says the chef.
Unlike traditional mayonnaise, this version only contains 150 kcal per 100 grams. It’s four times less caloric and tastes fantastic! This time, you won’t have any qualms about saying yes to homemade mayonnaise.
