In Italian, “tiramisu” literally means “pick me up.” It is, in essence, a mood booster, making it the perfect indulgence for those tough moments. Usually, the catch with most tiramisu recipes is the mandatory resting period. For the cream to set properly, the dessert needs to chill in the refrigerator for at least a couple of hours, or even better, overnight. However, when sadness strikes, who can wait that long? Fortunately, Italian chef Gianmarco Gorni has crafted a workaround that eliminates the waiting period. With his quick recipe, you can savor the dessert in less than 10 minutes!

Gianmarco Gorni’s Quick Tiramisu Recipe

Be warned, this is not your traditional tiramisu, cautions the chef in a video produced by Brut. In the classic version, eggs are a key component and to have it set, chilling is necessary, he explains to colleagues.   • He begins just like the classic recipe by dipping about twenty ladyfinger biscuits in cooled coffee. To prevent them from getting soggy, he quickly dips them on the flat side and immediately removes them.
  • To make the cream, he whips 200 grams of sugar with 250 grams of mascarpone, 600 milliliters of heavy cream with 35% fat content, and 100 grams of… Philadelphia cream cheese. “I might get criticized for this, jokes Gianmarco Gorni, mentioning the unconventional ingredient. The Philadelphia adds an interesting tang and helps the cream set faster“, he explains.
  • He starts whipping at a slow speed and gradually increases until the cream is nice and stiff. In just 2-3 minutes, the cream is ready!

Now, all that’s left is assembly: start with a layer of the coffee-dipped biscuits, followed by a layer of the whipped cream, repeat the layers, then top everything off with sifted cocoa powder, and you’re done. You’ll have to try it and see for yourself!
