Tiramisu holds a few secrets to its delectable success, straight from the heart of Italy…

A layer of ladyfingers, followed by a layer of mascarpone, and a dusting of cocoa powder… With focus and precision, you’ve been busy crafting a coffee tiramisu since the early morning. To create your favorite dessert, you meticulously followed a recipe you found online to the exact gram. After vigorously whipping egg yolks with powdered sugar until the mixture turned pale, you mixed in the mascarpone. Next, you gently folded in the beaten egg whites, taking care not to deflate them.

Finally, the mixture is ready! You take a breather, then prepare some coffee. You drink half of it (now you’re truly awake) and set the remainder aside in a bowl. Quick as a flash, you dip a ladyfinger into the coffee, then lay it at the bottom of your dish. And so on. After assembling the layers, you sprinkle the top with cocoa: your masterpiece is now ready to chill in the fridge. However, the next day, despite a night of cooling, your dessert hasn’t set properly: indeed, the mixture of cream and soaked ladyfingers tastes heavenly, but the appearance… mamma mia! Don’t worry: with a great tip from Italian chef Diego Accettulli, aka @diego_oggipasta, this mishap won’t happen again.

His trick? Thoroughly whip the mascarpone and then the egg yolks before folding them into the mixture. This crucial step, often skipped in non-Italian recipes, is essential for a firm and well-set tiramisu. Chef Accettulli emphasizes, “It’s very important to properly whip the egg yolks and then the mascarpone separately before combining them”. This ensures a tiramisu that holds its shape and won’t collapse. Another smart tip: sprinkle the tiramisu with cocoa just before serving, after it has chilled overnight.

To prevent a runny tiramisu, the amount of coffee used is also key: lightly soaked biscuits maintain their structure better after several hours in the fridge. You’ll find that with these adjustments, it tastes just like it does in Italy!
