Introducing La Tête de Moine

What’s it called? La tête de moine! This cow’s milk cheese, protected by a PDO (Protected Designation of Origin), originates from the Bellelay region in Switzerland. Its history dates back to the Middle Ages when monks produced it in the Bellelay abbey. Since then, its production has expanded to cheesemakers and was initially labeled as AOC (Appellation d’Origine Contrôlée), and later as PDO. While it might look ordinary at first glance, its method of consumption is truly unique. Thanks to a patented tool in 1982, known as the “girolle,” everyone can scrape the cheese to create beautiful rosettes. As a result, since this invention, the production of tête de moine has skyrocketed.
