“Raising a toast” is a unifying act at New Year’s Eve celebrations. And this isn’t just metaphorical, referring to the exchange of wishes for happiness and health at the stroke of midnight. It’s quite literal too. At the buffet, it’s always a pleasure to grab a few canapés to accompany a glass of champagne, experimenting with various spreads laid out on the platter.
However, these spreads often leave us wanting more, especially those that come from little industrial jars. Even if we overlook lumpfish roe trying to pass as caviar (“beggars can’t be choosers,” after all), it’s still hard to forgive the watered-down guacamole with only 3% avocado content (enough to make any Mexican laugh) and the so-called authentic Lebanese hummus made without any sesame paste. A cascade of deceptions, with supermarket tarama perhaps being the grand finale.
In its authentic form, this Greek and Turkish specialty typically consists of salted cod roe and soaked bread, a combination that naturally provides a creamy off-white color. This is quite a contrast to the neon pink version found in supermarkets, pumped up with cochineal red. How about skipping it this year? Edda Onorato from the blog “Un déjeuner de soleil” has a worthy alternative: homemade salmon rillettes flavored with lemon and dill: “a fantastic recipe, tasty and light with a perfectly balanced texture. I just love it,” she says.
The preparation is straightforward. For four people, start by steaming 200 g of fresh salmon for 10 minutes, possibly adding shallots and rosemary to the water for extra flavor. Alternatively, microwave it for 5 minutes sandwiched between two plates. Allow it to cool slightly, then flake the flesh with a fork in a mixing bowl. Add the zest and juice of 2 lemons, and 120 g of smoked salmon finely chopped with scissors (important for a smooth blend). Enhance with 1 tablespoon of mustard and 1 finely chopped garlic clove, then bind everything together with 100 g of cream cheese (like Philadelphia) and 120 g of skyr or Greek yogurt to achieve a creamy consistency. Finally, mix in 4 sprigs of finely chopped dill, season with pepper, adjust the salt if necessary, and let it firm up in the refrigerator for at least an hour. This makes a classy accompaniment for your New Year’s Eve blinis… and brings some genuine festivity to the table.

One bite promises a burst of flavors to start the year off beautifully. So, forget those disappointing jars and get your hands busy. Your guests will thank you, and you’ll kick off 2025 with flair.
