To avoid leaving the house on an empty stomach, the recipe for Turkish eggs, or çılbır, couldn’t come at a better time. Originating from the Ottoman Empire in the 15th century, this dish was a favorite among sultans. As culinary influencer Monelle Godaert, known online as not_so_superflu, puts it, “it really takes just two minutes” to prepare. It’s a delicious and hearty breakfast that will make those tough mornings a bit more bearable!
How to Make Çılbır
For two servings, you will need the following ingredients:
- 2 eggs
- 3-4 tablespoons of Greek yogurt
- 1 clove of garlic
- half a lemon
- a few sprigs of cilantro, dill, or your herb of choice
Preparing Your Çılbır
1. In a deep plate, mix the Greek yogurt with the minced garlic clove and the juice from half a lemon. Add a few sprigs of your chosen herb (such as cilantro). Season with salt and pepper to taste.
2. Fill a pot with water and add a tablespoon of vinegar. Heat the water until it just begins to simmer. Break the eggs into a small strainer, then gently lower them into the simmering water. Stir the water gently with a large spoon to create a whirlpool; this helps keep the egg whites from spreading out in the water.
3. After cooking for 3 minutes, carefully remove the eggs with the strainer and place them on top of the Greek yogurt.
For an even more indulgent experience, consider drizzling melted butter flavored with paprika over the eggs. Simply melt some butter in a pan, stir in the paprika, and cook until the mixture starts to sizzle.
