Peel and de-germ the garlic cloves, chop them coarsely. Wash and dry the basil leaves carefully with a paper towel.

Place the basil leaves in a mortar, snip them with scissors if they are very large. Add the coarse salt and crush until the leaves start to break down, turning a dark green and translucent color.

To finishAdd the garlic and pine nuts, continue to pound everything for a few minutes. Finally, add the Parmesan, Pecorino, and olive oil to taste.
