Whether it’s a drizzle over a tomato salad, a few spoons to sauté vegetables, or a dash on freshly strained pasta or burrata, olive oil has become a cornerstone of the Mediterranean diet and a staple in our kitchens. Due to its frequent use, many of us have designated a specific spot for it, always within reach.
This convenient habit, however, may not be wise. Olive oil is especially sensitive to certain conditions. Heat, light, and oxygen can accelerate its oxidation process. Gradually, its flavors dull, its fruitiness diminishes, and its nutritional benefits decrease. Simply put, storing it in the wrong location can shorten its lifespan significantly.
Giuseppe, an Italian restaurateur based in Enghien-les-Bains, emphasizes this point. According to him, the worst place to store olive oil is undoubtedly “next to the cooking stove”. While this spot might seem convenient during meal preparation, it actually poses several risks. The bottle seldom stays in the shade, and nearby pots and pans emit heat with each use. Over time, these frequent temperature spikes can hasten the aging of the oil.
Note that the refrigerator isn’t much better, as the oil solidifies due to the cold. It’s best to keep the bottle in a cool, dry place. Another important tip: opt for a dark glass container, which protects the oil more effectively from light than clear glass does. Moreover, even though it might seem obvious, it’s crucial to tightly screw the cap back on after each use to minimize air exposure and prevent the oil from going rancid.
By keeping your olive oil near the stove, you might save a few seconds each meal by avoiding trips to the pantry. However, this shortcut could end up leaving a bitter taste in your mouth. Consider whether it’s really worth the convenience!
