Everyone could benefit from spending a day with a chef to realize the many kitchen mishaps we unknowingly commit. A prime example is how we store our food, especially in our condiment cabinet. This area typically houses oils, vinegars, spices, and seasonings, and unfortunately, it often becomes a catch-all space. Without much thought, we toss in various items, assuming these staples don’t expire. This is a rookie mistake! Chefs are well aware that some oils are delicate and can quickly deteriorate if stored in these cabinets, leading to them turning stale or even rancid. This happens because they are especially susceptible to heat and oxidation.

In the culinary world, oils are not just used as cooking fats. They also play a crucial role in dressings, like vinaigrettes, or as finishing touches on vegetables, fresh goat cheese, or grilled fish, enhancing dishes with their subtle flavors and numerous nutritional benefits. Renowned chefs, including Christophe Hay from the Michelin-starred Fleur de Loire in Blois, favor using local and virgin oils, such as walnut and rapeseed oil from Maison Guénard, for their delicate aromas that do not overpower the dishes.

Importantly, to protect their precious flavors and health properties, these oils are not just stored anywhere in the kitchen. “If exposed to light or heat, they can go rancid,” he explains. “Once the bottle is opened, the best way to preserve these oils is by storing them in the refrigerator!” Yes, you read that correctly. And this advice applies not only to these oils but also to nut oils and other varieties like flax, camelina, and hemp oils which should all be refrigerated. This ensures they stay fresher and last longer.

A simple change in storage location can make a significant difference. If you typically keep all your oils in a cupboard, take a moment to check their labels; some might be better off in the fridge. This easy habit helps maintain their flavors, nutritional qualities, and prevents them from becoming rancid before you finish the bottle.
