During the summer, hardly a day goes by without indulging in melon. Whether it’s part of an appetizer skewered with slices of prosciutto, enjoyed as fresh wedges in a starter, or blended into a zesty lemon and sugar sorbet, you find yourself picking up two or three melons every time you visit the market. Your local farmer usually sells you one that’s ripe and ready to eat that day. The others, carefully selected to be slightly less ripe, should last an additional 3 to 5 days in your home before they’re perfect for your summer table. The first instinct might be to store your melon in the refrigerator. This is fine for a ripe melon that you’re not ready to eat immediately. Since melons are climacteric fruits, they continue to ripen after being picked, and the cold can slow this ripening process. In such cases, the Interprofessional Melon Association advises placing it in the vegetable drawer of your fridge wrapped in plastic wrap to prevent its aroma from affecting other foods. However, this might cause it to lose some of its flavor. But if your melon is still firm and not very fragrant, there’s a much better way to store it…

Instead of rushing to refrigerate, the Interprofessional Melon Association suggests storing melons in a completely different spot in your kitchen. “Melons keep much better in a cupboard or a cool cellar,” explains the group that includes French melon growers and distributors. Here, it can continue to ripen slowly, away from heat and light. Under such conditions, a melon can be preserved for up to 5 or 6 days without any issues, the association clarifies.

In summary, if your melon is still firm, it’s best to leave it in a cool, dark place for a few days to allow it to fully develop its flavors.
