Ever notice how potatoes at the grocery store never have sprouts, but once you bring them home, tiny white sprouts start poking out within days? You’re not alone. It’s a common annoyance to deal with these sprouts, on top of peeling the potatoes themselves. And no, you’re not imagining things—potatoes really do sprout faster than they used to. Since Europe banned a certain anti-sprouting chemical in 2019, sprouts can appear in just five to six days, compared to three weeks previously, as reported by journalists from TF1 during a field report. Thankfully, there’s a natural way to slow down this sprouting: simply store them in the right place!

It’s a misconception widely spread by older generations who traditionally kept their potatoes—as well as other fruits and vegetables—in a pantry or a cool, dark cellar. They would place them in a well-ventilated crate to allow the potatoes to breathe. However, this method is outdated today! Contrary to popular belief often seen online, the ideal place to keep potatoes is not the cellar. According to storage expert Michel Martin, from the agricultural technical institute Arvalis, the best place to store potatoes is actually in your refrigerator! “You should keep them cool, in the vegetable drawer of the fridge, where the temperature is optimal. This is similar to what is done in commercial storage facilities,” he told journalists from TF1.
And no, the vegetable drawer in your fridge isn’t too damp and won’t cause your potatoes to rot. On the contrary, this cool environment significantly slows down the growth of those pesky sprouts!
Note: However, make sure that your fridge temperature isn’t too low. If it drops below 6°C (43°F), the starch in the potatoes can turn into sugar, which might affect their flavor and texture.
