  1. 1

    Prepare the Ingredients

In a large bowl, alternate layers of sugar (600 to 700 g to taste) with a kilogram of washed, slightly dried, then hulled strawberries. Add lemon juice to enhance the strawberries’ flavor and let rest for about 12 hours covered with a damp cloth.

  2. 2

    Filter the Syrup

After resting, filter the syrup that has formed at the bottom of the bowl using a strainer. Alternatively, dissolve the sugar in a small glass of water and heat to 120°C.

  3. 3

    Check the Cooking

Put the syrup in a saucepan and bring to a high heat for about ten minutes. Throughout the cooking, remember to skim regularly to remove the foam that forms on the surface. Add the strawberries to the pot, and cook for 20 to 30 minutes.

  4. Finishing and Packaging

To check if the strawberry jam is ready, place a spoonful on a cold plate and tilt the plate. If the jam sets without running, it is perfect.

Tips

How to Thicken Too Runny Strawberry Jam?

To thicken strawberry jam, extend the cooking time slightly to evaporate excess water. You can also add a bit of lemon juice or a small amount of natural pectin (such as grated apple) to improve the texture without altering the taste of the strawberry jam.

How Long Should You Cook Strawberry Jam?

Strawberry jam typically cooks for 20 to 30 minutes after boiling. The exact time depends on the amount of fruit, their water content, and the desired texture. To check the doneness, drop a bit of jam on a cold plate: if it sets, the jam is ready.

Why Add Lemon Juice to Strawberry Jam?

Adding lemon juice to strawberry jam helps to enhance setting due to the natural pectin in the fruit. Lemon also acts as a natural preservative, balances the flavor, adds a slight acidity, and helps maintain the strawberries’ vibrant red color.
