In Brazil, avocados aren’t just destined for guacamole. They are often the star in a recipe that is both decadently surprising and delightful.

If you search “what to do with an avocado” on Google hoping for some fresh ideas, you might find yourself quite disappointed. The usual suspects dominate the scene: avocados mashed into guacamole, stuffed with tuna and mayonnaise, sliced into shrimp salads, or spread thickly across toast accompanied by a classic poached or soft-boiled egg.

Am I being overly critical? Perhaps a tad. Fortunately, the avocado does occasionally break out of its typical roles. Let’s give it some credit for its bold pairings, like with mango in a tartare, replacing the bread bun in a burger, or even grilling like a steak on the BBQ. Lately, it’s ventured into the realm of desserts—not just in the typical green detox smoothie intended to cleanse us from within. It stealthily substitutes for butter or eggs in some chocolate fondants and mousses, and it competes with matcha tea to add a touch of green to cheesecakes. This isn’t too surprising once you realize that botanically speaking, avocados are fruits.

In Brazil, they particularly love turning it into a dessert, specifically into crema de abacate. This sweet, tangy, and supremely creamy avocado cream is made with just three ingredients: avocados, lime, and sweetened condensed milk. Food explorer Noémie Germain, known as @spicynoemie on Instagram, shares how to make this delightful treat.

The recipe serves 2 to 3 people. Begin by halving, pitting, and scooping out the flesh of two ripe avocados into your blender. Add the juice of one lime, and 120 to 150 grams of sweetened condensed milk (adjust the amount depending on the sweetness of the avocados). Blend everything until you achieve a smooth and creamy consistency. Then, chill the mixture in the refrigerator for at least 30 minutes to allow it to thicken. Serve it in glasses or small bowls, possibly drizzled with a bit more lime juice and garnished with some lime zest. But resist the urge to dip tortilla chips into it – apparently, that combo isn’t the best…

Whether it’s hiding in a burger, daring the grill, or venturing into sweet territory, the avocado knows how to stir things up in the kitchen. The crema de abacate is a prime example: a quick recipe, disarmingly simple yet completely transformative. It just goes to show that sometimes, all it takes is a fresh perspective to break free from our culinary routines.
