“In Canada, we love sweet and savory recipes,” the producer explains. Indeed, during meals, a bottle of maple syrup is passed around among the diners, much like salt or pepper. It is the quintessential condiment of a traditional Quebec meal. Sausages, smoked ham, bacon—all are glazed with this amber syrup. But what about fish? It’s no exception. Like other dishes, it’s prepared with the famous maple syrup. Stéfan shares, with a twinkle in his eye: “My father has a recipe for oven-poached salmon with maple syrup and soy sauce.” Here’s how to make it at home…

While Stéfan didn’t spill all the family secrets, we’ll follow another Canadian recipe for two, suggested by the website Flavors of Maple. Start by heating a third of a cup of maple syrup, two tablespoons of lemon juice, a quarter cup of water, and two tablespoons of soy sauce in a saucepan. Add a bit of fresh ginger if you like. Bring everything to a boil for 6 minutes: your sauce is now ready. Place two salmon fillets in a baking dish, then drizzle them with this mixture. All that’s left is to bake them for 15 minutes at 350°F (in a preheated oven). The result? Melt-in-your-mouth, caramelized salmon fillets!
