There’s no question that baked Camembert is delightful. However, when it comes to gooey goodness, there might just be another cheese that edges it out…
It bestows a love from Normandy to all who break through its bloomy rind. Affectionately known as “clacos” by some, Camembert stands as a staple on French cheese platters. It’s the second most popular cheese among the French, right after Emmental, and finds its way onto the table all year round, nestled between the main course and dessert, often accompanied by a crispy traditional baguette. But in the colder months, this beloved French soft cheese prefers to be roasted in its wooden box, warmly wrapped and possibly drizzled with honey, a sprig of rosemary, or some dried fruit thrown into the mix. A simple green salad (to ease the conscience), sautéed potatoes, or a charcuterie board (post-diet indulgence), and perhaps even ripe pears (for those who adore sweet-salty combos) make for a delicious accompaniment.
But what truly makes us swoon over baked Camembert is its exceptionally gooey center. Yet, despite what our Norman friends might think, another cheese takes the crown in this department. The food influencer starts by optionally removing the top and bottom crusts and seasons the surface with pepper and thyme before beginning the breading process: he first coats the Caprice des Dieux in flour, then dips it into beaten eggs, and finally covers it in breadcrumbs – or panko for a lighter finish. He repeats the whole process to ensure the breading is thick enough. Then, he deep-fries the cheese in hot oil for about 3-4 minutes. Once it’s golden brown on all sides, he carefully retrieves it using a slotted spoon, places it on his plate, and cuts open the top to joyfully dip his roasted potatoes in.
