However, your cozy plans might crumble—literally because you’ve run out of bread. You personally could do without—it wouldn’t bother you to just nibble on some toast at the breakfast table. But your partner doesn’t share this view. For them, a breakfast without a slice of baguette to soak up sauces or spread their pâté is unimaginable. It’s times like these, when you just want to stay in your pajamas, that you regret not planning ahead. Buying in bulk and freezing would have been smarter. If you’re not venturing outside, how about getting your hands doughy instead? Sounds good on paper, but first, you need to have everything to open your temporary bakery. Flour? Check. Salt? Check. Oh no, you’re out of baker’s yeast. Without it, the dough won’t rise much…

Hold on a minute. Do you have a packet of baking powder in your cupboard and some cottage cheese in the fridge? It turns out you’ve got just what you need to make a beautifully crusty, golden baguette much faster than a trip to the bakery. Belqis Valsan (@belqisvl) shares the secrets of her quick recipe on Instagram.

The measurements are for one baguette. In a mixing bowl, combine 100 g of wheat flour with 1 teaspoon of baking powder and salt to taste. Then mix in 80 to 90 g of skyr to achieve the desired dough texture (cottage cheese or plant-based yogurt also works!), and optionally a drizzle of olive oil for a softer result. Once you’ve kneaded the dough into a ball, shape it into a baguette and let it rest for 10 to 15 minutes at room temperature. Brush it with a bit of milk or plant-based drink, possibly sprinkle some sesame seeds on top, then bake on a tray for 20-25 minutes in an oven preheated to 180 °C. Let it cool before slicing—or splitting it in half if you prefer to make a sandwich!
