Canned vegetables are increasingly finding their way onto American dinner tables. According to a 2024 survey conducted by the CSA Institute for UNILET, 90% of respondents say they eat them—up 4% from 2020. Additionally, 62% report opening a can at least once a week. What’s driving their popularity? Top reasons include their ease of preservation and storage, the time savings they offer in meal preparation, their role in diversifying meals—especially during winter when produce options may be limited (hello, canned peeled tomatoes!), their ability to reduce food waste (no more neglected, rotting zucchinis in the fridge), and their help in meeting the daily recommended intake of five fruits and vegetables without even needing a cutting board.
What about cost-effectiveness? 88% of those surveyed believe canned vegetables offer good value for money. However, price still plays a significant role in their choice, coming in as the second most important factor right after the type of vegetable.
If you take a closer look at labels on the supermarket shelves, you’ll notice that one canned vegetable stands out at the checkout: mixed vegetables. Nutritionist Dr. Jean-Michel Cohen points out that this combination of carrots, lima beans, turnips, green beans, and peas is particularly cost-effective for manufacturers. They can use up the remnants of vegetable harvests that aren’t enough to warrant a standalone product. Generally, you can expect to pay less than one dollar for a small can.
Moreover, mixed vegetables are quite versatile once drained. Served cold with a dressing or a creamy homemade mayonnaise, they quickly become an inexpensive and easy starter. Warmed up with a dab of butter, they easily accompany any meat or fish dish. The only slight disappointment? A small serving does not count as five separate vegetables…
