If you’ve long given up on fresh artichokes due to their lengthy cooking time and cumbersome preparation, this straightforward recipe might just change your mind!
Low in calories, high in fiber, and full of flavor—on paper, artichokes have a lot going for them. However, in practice, they tend to intimidate even the bravest of home cooks. Between the seemingly endless boiling time (30 to 45 minutes) and the tedious task of removing the fuzzy choke, preparing them can feel like an obstacle course.
Consuming them can be just as challenging: pulling off each leaf to scrape off the flesh with your teeth is fun for some but frustrating for others who are eager to reach the heart. As a result, many people opt out of cooking them at home and settle for less tasty canned artichoke hearts instead.
What if a simple change in approach could make fresh artichokes more approachable, available from April to November? That’s exactly what Camille Guyon, a dietitian, suggests with her much easier preparation method. Instead of boiling them, she suggests using artichokes raw in a salad. Yes, it’s possible, and it’s absolutely delicious!
The nutrition expert starts by removing the toughest outer leaves and peeling the stems with a vegetable peeler. She then cuts the artichokes in half without bothering to remove the choke. This shortcut may seem surprising, but it’s perfectly fine as long as you choose young, small-sized artichokes whose hearts are generally tender and not fibrous.
She then thinly slices them using a mandoline to create delicate slivers, which she immediately dresses with lemon juice to prevent them from browning due to oxidation. For the dressing, she simply adds beautiful shavings of Parmesan, a drizzle of olive oil, and some finely chopped basil leaves.
The result is a light, crunchy, and flavorful salad that’s ready in no time. It’s one of those simple, quick, and effective recipes that make you fall in love with an ingredient you once thought was too complicated.
