Ingredients

  • Penne or other pasta (amount depends on hunger)
  • 1 eggplant
  • 1 onion
  • 200 g of tomato puree
  • Herbes de Provence
  • Basil
  • Olive oil
  • Parmesan cheese
  • Salt and pepper

Preparation

    Wash the eggplant and slice it thinly. Wrap it in plastic wrap and microwave for 5 minutes on high (900W).

    Meanwhile, finely chop the onion and sauté in a pan with olive oil. Add the eggplant slices and continue cooking. Cook the pasta until al dente.
  3. To finish

    Add the tomato puree, Herbes de Provence, and basil to the pan with the onion and eggplant. Season with salt and pepper. Drain the pasta and add it to the pan. Mix well. Serve immediately, generously sprinkled with Parmesan cheese. Enjoy your meal!
