In a mixing bowl (or a stand mixer to save time), blend the butter and egg yolk using a wooden spoon. Add the flour, sugar, cinnamon, and salt. -

Knead until it forms a dough ball (add a little water if needed, but it usually isn’t necessary). Wrap the dough in plastic wrap and refrigerate for at least 1 hour. -

Preheat the oven to 350°F (180°C). Roll out the dough to about 3 mm thickness and cut out shapes with cookie cutters. Make a small hole with a toothpick or a knitting needle to hang them on the Christmas tree. Place the sablés on a baking sheet lined with parchment paper. Bake for about 15 minutes. -

Meanwhile, prepare the icing: place icing sugar in a bowl and add a few drops of water (be careful, you only need a tiny amount). Mix with a teaspoon until the icing is just wet and smooth. Once the sablés are out of the oven, cover one side with icing and allow to dry and cool completely. -
To Finish
To hang them on the tree, thread a string through each hole, tie a knot, and you’re set! Enjoy your meal!
