Place the couscous in a bowl, cover with cold water. Allow to sit for half an hour, occasionally loosening the grains with a fork to aerate the couscous. Once the water has been fully absorbed, drizzle with lemon juice, season with salt and pepper, and mix with a fork. -

Wash and deseed the tomatoes. Peel the cucumber. Chop both into small cubes. Peel and finely chop the onions. Add everything to the couscous, drizzle with olive oil, and mix. -
To Finish
Finely chop the herbs with a knife and add them to the salad, mix well. Adjust seasoning if necessary and chill for at least 2 hours.
