Ingredients

  • Medium Couscous

    200 g

  • Roma or Beefsteak Tomatoes

    400 g

  • New Onion

    150 g

  • Cucumber

    ½

  • Lemon Juice

    1

  • Olive Oil

    3 tbsp

  • Flat Parsley

    1 bunch

  • Fresh Coriander

    1 bunch

  • Mint

    1 bunch

  • Salt

    1 pinch

  • Pepper

    1 pinch

Preparation

    Place the couscous in a bowl, cover with cold water. Allow to sit for half an hour, occasionally loosening the grains with a fork to aerate the couscous. Once the water has been fully absorbed, drizzle with lemon juice, season with salt and pepper, and mix with a fork.

    Wash and deseed the tomatoes. Peel the cucumber. Chop both into small cubes. Peel and finely chop the onions. Add everything to the couscous, drizzle with olive oil, and mix.
  3. To Finish

    Finely chop the herbs with a knife and add them to the salad, mix well. Adjust seasoning if necessary and chill for at least 2 hours.
